- Preheat oven to 425.
- In bowl, combine all ingredients.
- Form into 1" meatballs (makes about 6-7).
- Place in baking dish or non-stick baking sheet and cook 10 minutes turning halfway through cooking time.
TIP: I usually use a glass baking dish to make these as they seem to want to stick less. Also, if you want to brown them more after cooking, you can broil them for 1-2 mins each side.
These also can be frozen in a freezer bag and then warmed up before serving. Makes a great quick meal!
Top with marinara sauce.
P.S. The kids named this one. Definitely a family pleaser!

This receipie is great for a change when everything else taste the same
AMAZING!! I am definitely going to make this for my family once my HCG round is over! Thank you!
This is the best recipe I have found. I made 4 servings of the meatballs and marinara sauce and then portioned it out in 4 freezer bags. It was great when I needed something fast. It is a very hearty meal and it leaves me very satisfied along with a serving of strawberries.
I LOVE THIS! I tried it the first night for dinner and loved it so much, that I made 15 more servings and had them throughout my Phase 2. Great Job! 5 stars! p.s. I also did as she suggested and threw in the spices "to taste"...
Excellent, thank you!! I think next time I'll use some more salt and maybe garlic, but that's just because I am a goof and like salty ;) I love the broiling at the end to get almost a crust on the meatballs, very rich. Thank you for all this! I swear you're keeping every one of us that reads your blog onto the diet instead of giving up!
I have cooked the meatballs and have dropped them in the albondigas soup and am anxiously awaiting the 20-30 mins, man my house smells awesome! I can't wait I was so bored with the norm. Thank you so much for your posts!
I used beef broth instead of milk cause I was unsure if I could have milk, and I had to blot the meatballs when they came out, but they looked great.
I made these but used 1 spiral sliced zucchini to make "angel hair pasta" (I'm a bit rogue on P2) and it was to die for! Who needs pasta????
