- Preheat pot over medium-high heat.
- Add garlic, and cook for 3-5 minutes. (Heat until you see little bubbles around the garlic.)
- Use a bit of your broth to keep garlic from sticking to the pot, if necessary.
- Add tomatoes, chicken broth, and onion powder, cumin, chili powder, cayenne.
- Bring to a boil.
- Reduce heat to a simmer, and add chicken.
- Simmer for 20 minutes.
- Stir in cilantro, and simmer for 5 minutes more.
TIP: For easy chopping of cilantro and other herbs, use kitchen shears. When using a knife sometimes the leaves of the herbs are difficult to chop. The kitchen shears make this a simple task.

This is really good. I added extra cayenne and chilli powder and didn't have cilantro. Yummy I will make again.
I have made a recipe similar to this and added onion and tomatoes if you are mixing veggies, this might be a tasty treat.
Made this for dinner tonight... My husband (who is NOT on the diet) and I both loved it! :) The spicy clears the sinuses, but it has a great flavor, totally doesn't taste like diet food. Yum! Thanks!
