Emeril's "Southwest Spice"

I had this written down somewhere and it just happens to be on plan. :)
I usually omit the salt, but left it here.

2 T chili powder
1 T dried oregano
2 T paprika
1 T ground coriander
1 T garlic powder
1 T salt
2 t ground cumin
1 t black pepper
1 t cayenne pepper
1 t ground red pepper



Combine all ingredients thoroughly and store in an airtight container.

I made up a batch of this rub, and it's really yummy. I like the salt, and actually needed to add more after the chicken was cooked. If you can buy the spices bulk, this is very affordable (like under $4/batch).

I LOVE this rub!!! In my part of the world, red pepper and cayenne pepper are the same thing, so I used RED PEPPER FLAKES instead of the second red pepper spice.
