Lemon Oregano Whitefish Packet w/ Asparagus

  • 100g whitefish
  • asparagus (allowed amount)
  • juice of one lemon
  • 1 t oregano
  • salt/pepper

    1. Preheat the oven to 400F.
    2. Snap off woody ends of asparagus and discard.
    3. Tear off a large sheet of non-stick aluminum foil.
    4. In the center of this sheet, place asparagus spears and sprinkle with salt/pepper.
    5. Place whitefish on top of asparagus.
    6. In small bowl, combine lemon juice & oregano, and pour over fish.
    7. Fold up edges and completely seal packet on all sides.
    8. Bake 10-20 mins, until fish flakes.
    9. Serve.

    This recipe is GREAT!! I put it in a casserole dish, however, instead of tinfoil... I think the tinfoil method sounds good for camping. My (skinny, non-dieting husband liked it too. This is a recipe that I'll use in regular life. I'm grateful to find a fun way to cook asparagus. We pick it wild in the spring and have lots. Thanks, Kathy

    When making this recipe be careful when adding the lemon. I added juice of 1 lemon and it was so over powering to the asparagus I could not eat it. The fish was lemony to. It is a great tasting recipe just watch out for to much lemon!

    I only used 1/2 lemon, and it was still extremely lemony...but still good. Nice way to cook fish!

    I also crushed my melba toast (since I hadn't had mine for today) spices and sprinkled it on top. I agree about the 1/2 lemon!

    This is great! I too made this for my husband who is not doing the diet. He loved it. I Liked how lemony it was (Maybe i used a smaller lemon) anyways this is a new fav.

    This was not one of my favorites. I did use a whole lemon and it was very overpowering. I also could not eat it. the asparagus in general just wasn't good tonight. I'll try again, and use less lemon and just the casserole dish. It was difficult unfolding the foil to find that it wasn't done. I just made a big mess trying to refold it and keep all the juice inside.

    I followed this recipe exactly, it was AMAZNG and super EASY for those of us with limited culinary skills. I was totally full; I used 100g of white flounder. I wonder if I should have cooked more at once? How long do think it would keep? BTW, my 7 and 9 year old each had a small bite and gave it a thumbs up!

    This recipe is AMAZING!!! I am so happy with it. I stuck with the recipe as is including using a foil and It was great. Many places I saw 10 Asparagus is good, So I did that. The lemon was perfect for me. Also, I am probably the clumsiest person ever and I did not make a mess preparing this. My skinny can-eat-whatever-he-wants-and-remain-thing boyfriend loved this recipe as well. I've made it 3 times so far and every time it came out perfect and we were both satisfied.
